This is a great low fat, low calorie version of traditional beef stroganoff. In the cooler months many of us long for comfort foods but not the calories. This version is tasty and for less than 300 calories a serving, perfect to help you maintain your ideal weight.
- 16 ounces fettuccini or egg noodles
- one package Lightlife Smart Ground
- 2 cups vegetable broth
- 6 cups chopped mushrooms, ( I mix button & baby Portobello)
- 2 medium red onions, chopped
- 1/2 cup light sour cream
- 3 heaping tablespoons corn starch dissolved in a 1/2 cup of warm water
- salt and pepper to taste
Cook noodles according to package directions. I used bow tie pasta because that’s what I had on hand. Drain and set aside.
In a large skillet over medium heat sauté the onions and mushrooms with enough broth to prevent sticking. Cook until onions are translucent. Add Smart Ground and remaining broth, cooking for an additional five minutes. Reduce heat to low, stir in the corn starch mixture a tablespoon at a time, stirring well after each addition. Mixture should be thick but not pasty. ET: Three tablespoons is usually enough to thicken the stroganoff. Salt and pepper to taste.
Allow mixture to simmer for 15 minutes giving the flavors time to mingle. Stir in sour cream being sure to completely incorporate it into the mushroom mixture.
Serve over noodles. Not a huge noodle lover? This dish is also great over baked potato slices or rice. A green salad nicely compliments this dish and adds some color for visual appeal.
